vegan chocolate cake!

for my roomie’s b-day, yesterday, i attempted and successfully produced a completely moist and vegan “chocolate” cake!

cake ingredients

  • 1-1/2 cups flour
  • 1/2 cup oil
  • 1/4 cup cocoa
  • 1 cup sugar
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp white vinegar
  • 1 cup cold soy/rice/almond milk
  • 1/2 cup water

directions

Mix all ingredients together until smooth. Grease and flour a loaf pan and bake for 30 minutes at 375°.

frosting ingredients

  • 1 container Tofutti Better Than Cream Cheese
  • 1/2 cup soy margarine
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

directions

Combine the cream cheese and margarine. Slowly add the powdered sugar, then vanilla and lemon juice. Whip until thick (add some flour if too soupy) I added a sprinkling of cocoa powder to make it a chocolate
