apple oatmeal cookies

well, more like oatmeal apple raisin breakfast rolls than like cookies. they are very squishy (even after a half-hour of baking @ 350!) but man are they tasty! they’re like taking a bowl of oatmeal in your pocket! i plan on having one (or two) for breakfast tomorrow.

ingredients

  • 2 cups oatmeal
  • 1 cup whole wheat flour
  • 1 cup yerba prima daily fiber supplement (or 1 additional cup of flour…i was out)
  • 1 t. baking soda
  • 1 t. cinnamon
  • 2 cups unsweetened apple juice
  • 2 cups freshly chopped apples
  • 1 cup raisins or dried cranberries (optional)
  • 1/2 cup sugar
  • 1 t. vanilla

Combine the dry ingredients in one bowl. Mix the wet ingredients + the diced apples in another bowl. Mix together. Stir in the dried fruit. Add water if too dry. Roll in small balls and smash to 1/4 ” thickness on the cookie sheet (although i made mine much larger).

Bake at 250 degrees for 25-30 minutes.
